Caramel Bars
Jolly Acres Goat Caramels (YUM!)
My mom used to make caramel bars and forgot the recipe. When I saw this recipe card I just knew I had to try it in hopes it was similar! I absolutely love the layers and decadent creaminess. My mom's variant used a mix of semi sweet chocolate chips with white chocolate and butterscotch chips and it was wonderful!
If you've never tasted goat caramels, I highly recommend these! They come in several sweet and spicy flavors and are a local favorite. Our family frequently sneaks away to enjoy a bag of goat caramels.
Caramel Bars
32 caramels (I used 15 of the Jolly Good Shop's goat caramels. They are HUGE and amazing!)
5 Tbsp. evaporated milk
1 cup flour
1 cup oatmeal
¾ cup brown sugar
½ tsp. baking soda
¾ cup butter, melted
1 cup chocolate chips
1 cup chopped nuts, optional
Melt together caramels and evaporated milk. I use a rice cooker for this as it heats gently and doesn't require as much babysitting. Keep warm. Combine flour, oatmeal, brown sugar, baking soda, and butter. Press half of mixture into a 9x13 inch pan. Bake at 350ยบ for 8-10 minutes. Cool 1 minute. Sprinkle nuts and chocolate chips over baked crumble mixture. Spread caramel mixture over top. Sprinkle with remaining crumb mixture. Bake 12-15 minutes. Cool completely and cut into squares.
