Peaches N Crumb Cake
This might be the new ultimate comfort item in my house. If you're having a rough week, let this warm and spicy treat put a smile back on your face.
Peaches N Crumb Cake
1 ¾ cups flour
¼ cup sugar
½ tsp. salt
1 package active dry yeast
2 Tbsp. butter, softened
½ cup hot tap water
1 egg, room temperature
¼ cup firmly packed light brown sugar
½ tsp. cinnamon
¼ tsp. nutmeg
2 Tbsp. butter
1 16oz can peach slices, drained
Combine ½ cup flour, sugar, salt, and undissolved yeast. Add 2 Tbsp. soft butter and hot tap water to dry ingredients and beat 2 minutes at medium speed. Add egg and ½ cup flour. Beat on high speed 2 minutes. Sit in ½ cup flour to make a stiff batter. Spread in greased 9-inch square pan. Combine remaining flour, brown sugar, cinnamon, and nutmeg. Cut in 2 Tbsp butter until crumbly. Sprinkle over cake. Arrange peach slices on top. Cover, let rise until doubled (about 1 hour.) Bake at 400ยบ F for 25 minutes. Cool in pan 10 minutes and then cool completely on rack. Drizzle with glaze if desired.
