Banana Bread
Bananas are a hot commodity in my house with 2 growing teens and 2 hockey players. We probably buy 20 a week, and they are all devoured before they even start to turn a hint of off-yellow. Needless to say, I had to hide a few to finally achieve the perfect banana texture for this yummy bread! It was well, worth it, and I hope you enjoy Mrs. Pidgeon's wonderful rendition of this classic:
Banana Bread
2 cups sugar
1 cup shortening
4 eggs
6 bananas
1 tsp. salt
2 tsp. baking soda
2 ½ cups flour
½ cup nuts
Cream shortening and sugar. Add eggs one at a time. Mash bananas and blend into mixture. Add dry ingredients. No not overmix. Pour into two greased and floured loaf pans and bake at 350ยบ for 50 minutes.
*I found it amusing that Mrs. Pidgeon wrote in very neat letters the word “BANANONA” at the bottom of this card.
