Gingerbread Cake

 

    This is a recipe from another woman who's box of recipes I purchased  at an online auction. I know nothing about her, the listing was simply for "My Grandmother's Recipes." I call her Patty- because almost all of her recipes are for peppermint candies of one kind or another! She seems to have been the queen of candy- and this is her recipe for Gingerbread Cake.


Gingerbread Cake Man

1 cup shortening
4 eggs, beaten until smoooth
1 cup buttermilk
1 cup brown sugar
1 cup molasses
2 1/2 cups flour
2 tsp. baking soda
1 tsp. ginger
1 tsp. cinnamon

Cream together, one ingredient at a time, the shortening, eggs, buttermilk, brown sugar, and molasses. Sift together in a separate bowl the flour, baking soda, ginger, and cinnamon. Add into the creamed mixture slowly.  Brush the inside of a gingerbread man mold (or any desired shape) with melted butter or shortening. Dust with flour. Fill front part of the mold with batter, and secure the two halves of the mold together. Place in a preheated 350 F oven on a cookie sheet and bake for 30 minutes. Turn upside down, and bake 15 minutes longer. Remove from oven and allow to cool for 20 minutes before opening mold  Then  remove top mold piece. Allow to cool for several hours before removing from bottom half of mold.
