Sunny Scalloped Potatoes

 

    I will never buy boxed scalloped potatoes again after trying these.  The potatoes come out so soft and tender, and the top layer has a rich caramelized texture.  Two of us polished off half the pan in one sitting. 

The prep time is minimal, and these don't take much longer to cook than a box of processed potatoes. I highly recommend this inexpensive and tasty side dish!

Sunny Scalloped Potatoes 

5 cups potatoes, peeled and thinly sliced 
2 Tbsp. flour 
1 tsp. salt 
Dash of pepper 
½ lb Velveeta cheese spread, cubed 
¾ cup milk 
¼ cup green peppers, chopped 
¼ cup onions, chopped 
2 Tbsp. Pimiento strips 

Toss potatoes in flour, salt, and pepper. Place in baking dish. Heat Velveeta and milk in a medium saucepan until smooth. Add onion and green pepper with Pimiento strips. Pour over potatoes. Bake at 350 F for 50 minutes or until potatoes are tender.

  1. does this have green peppers or green onions? the picture looks like green onions? also i dont see any pimiento strips in the picture?

    1. I used green peppers and yellow onions. I didn't have the full 2 Tbsp of pimiento strips to add in, so they're not really clear in the picture but they add a really nice zing!
