Garden Fresh Pork Chops

 

    This was very simple and inexpensive to make.  My whole family loves pork chops and we're always down for a new way to enjoy them.  Mrs. Pidgeon's method was almost as simple as throwing everything in a crock pot and walking away.  Just keep an eye on your pork chops to make sure they aren't being overcooked, and the rest practically does itself! These come out very tender and juicy. 


Garden Fresh Pork Chops

1 Tbsp. butter
1 (8 oz.) pork chops, about 1” thick
1 carrot, cut into ½" pieces
1 (13 oz.) can green beans, drained
1 potato, cut into chunks
¼ tsp basil
2 envelopes instant cream of mushroom soup mix
2/3 cup water

In medium skillet, melt butter. Brown pork chops. Add vegetables and basil. Combine soup mix and water; add to vegetables. Cover and simmer on low 45 minutes or until chops and vegetables are tender.
