Fresh Apple Cake
Out of all of Mrs. Pidgeon's recipes we've made so far, this filled my kitchen with the best smells. It brought every member of the household sniffing to the kitchen at one point asking if cake was ready.
The recipe didn't call for it, but I peeled the apples because my family isn't big on the peels. I chose walnuts for this recipe, but you can use any you like. It makes two delicious apple cakes, one to keep and one to give to a loved one (if it makes it out of the house- it's GOOD!)
Fresh Apple Cake
1 ½ cups oil
3 eggs
1 tsp. baking soda
3 cups diced apples
3 cups flour
2 cups sugar
2 tsp. vanilla
1 tsp. salt
1 cup chopped nuts (I used walnuts)
For the glaze:
1 stick butter
¼ cup milk
1 cup brown sugar
1 tsp. vanilla
Cream together oil, sugar, eggs, and vanilla. Add flour, baking soda, salt, apples, and nuts. Bake in greased, floured, loaf pans at 350 F for 45-55 minutes.
In a saucepan, combine all glaze ingredients and boil 2 ½ to 3 minutes. Pour over hot cake. Leave cake in pan to cool.
