Chocolate Butterballs

This was a spur of the moment addition to our Thanksgiving arrangement... because #2020.

I opted out of using nuts in this one, and my kids joined me in the kitchen for the rolling and baking.  There are only 2 oz of chocolate in this recipe, but the chocolate smells were absolutely wonderful! These little cake balls are soft and tender and so full of flavor. I hope you try them and love them as much as we did!

Chocolate Butterballs

2-1 oz. squares of semi-sweet chocolate
1 Tbsp. milk
2 cups sifted flour
½ tsp. salt
½ cup sugar
¾ cup soft butter
2 tsp. vanilla
½ cup chopped nuts
1 cup powdered sugar

In top of double boiler, melt chocolate with milk. Set aside to cool.

Sift flour and salt together and set aside. Cream butter with sugar and vanilla until fluffy. Blend in cooled chocolate mixture. Gradually add flour and salt mixture and mix well. Stir in nuts. Shape dough into 1 ½” balls with fingers. Roll in powdered sugar and place on ungreased cookie sheet at least 2” apart.

Bake at 350 F for 12-15 minutes. Let cool and roll again in powdered sugar. Makes 2-3 dozen.
