Cheese Balls
This seemed like a fitting recipe to fit into the holidays. I can't remember a time without a grandmother or aunt bringing cheese balls to Thanksgiving and Christmas, and I had no idea how simple they were to make.
I highly recommend following Mrs. Pidgeon's instructions to use cheddar, as I tried this with a blend of yellow and white cheese originally and they came out dry. The cheddar gives them a much better texture.
Cheese Balls
1 cup sharp cheddar cheese, grated
½ c butter
1 ¼ cups sifted flour
¼ tsp. paprika
¼ tsp. salt
Cream cheese and butter in a bowl. Blend in salt, paprika, and flour. Knead lightly with hands to form a soft dough. Roll into balls about one inch in diameter and place on a greased cookie sheet. Bake 12-14 minutes at 400 F. Best served piping hot.
