Apple Cheesecake

 

    I was not blessed with the gene that allows for dairy consumption, so I'm dropping this one with the caveat that I have not tried this recipe.  No amount of Lactaid could possibly make cheesecake happen for me; but my daughter adores it.  I make it for her and snag a taste one day; in the meantime please let me know if you try this one and how it turned out!

Apple Cheesecake

1 ¼ cups graham cracker crumbs
5 Tbsp. butter, melted
½ tsp cinnamon
1 (8 oz.) pkg cream cheese, softened
2 Tbsp. lemon juice
1 cup milk
1 (6 oz.) pkg instant vanilla pudding mix
1 (21 oz.) can apple pie filling

Combine crumbs, melted butter, and cinnamon; and set aside 2 Tbsp. Press remaining crumbs into bottom and 1 1/2 inches up the sides of an 8” spring form pan. In a mixer bowl combine cheese, and lemon juice; beat with electric mixer until fluffy. Add milk and pudding; beat until combined (mixture will be thick.) Fold in the pie filling. Turn into prepared pan. Sprinkle reserved crumb mixture over top and chill.
